This cake makes a delightful cupcake or a great dish for a holiday party, potluck, or bake sale.
Two cups flour, self-rising, wholemeal
Two tablespoons soy flour
One teaspoon of baking powder
One teaspoon pudding spice
Four teaspoons brown sugar
One-half cup butter or margarine, vegetable margarine for vegan cooks
One-half cup soy milk
One medium banana, mashed
One medium carrot, grated
Two tablespoons sesame seeds
Sift flours into a large mixing bowl, along with pudding spice and baking powder, and set aside. Cream together butter or margarine, and sugar. Stir in milk, banana, and carrot. Combine this mixture with your dry ingredients. Use your hand mixer to beat together your cake batter. Pour batter into a prepared two-pound loaf pan. Top with sesame seeds evenly spread across the top. Bake for one hour in a 350-degree oven.
