INGREDIENTS for Homemade Sugar Free Diabetic Cake Recipe
Two cups of raisins
Three cups of water
Two large eggs
Three tablespoons of liquid sugar substitute
Three-fourths up of vegetable or canola oil
One teaspoon of vanilla extract
One teaspoon of baking soda
One-half teaspoon each, salt and nutmeg
One and one-half teaspoons cinnamon
Two cups of flour
One cup of sugar-free applesauce
One cup of walnuts, chopped (optional)
Prepare a ten-inch tube or Bundt pan with shortening and flour.
Place water in a medium saucepan, and add raisins. Cook over medium heat, stirring occasionally until raisins have absorbed the water. Set aside and allow to cool.
In a large bowl, mix together eggs, oil, applesauce, and sweetener. Over this mixture, sift the flour, salt, nutmeg, cinnamon, and baking soda. Combine all these ingredients thoroughly. Add walnuts, if desired, and raisins. Pour your batter into the pan, and bake for an hour in a 350-degree oven.
