Blueberry Cheesecake

What a party this cake is! No more words are needed, just create and enjoy. That’s all.

What you need:

175gr butter (at room temperature)

bread-crumbs

400gr blueberries or blueberries

4 free-range eggs

> 180gr fine granulated sugar

1 packet of vanilla-flavored sugar

75gr flour (sifted)

1 tsp baking powder

750gr low-fat quark

1 tbsp fresh lemon juice

150gr good quality blueberry jam

What you will do:

Preheat the oven to 175gr. Take a springform pan with a diameter of 26cm and grease it with some butter. Sprinkle little breadcrumbs over the bottom. Wash the blueberries and let them drain well. Split the eggs and put the egg whites covered in the refrigerator.

Beat the egg yolks, 150gr softened butter, sugar, and vanilla sugar with a hand mixer in 3-5 minutes until nice and white and creamy. Use a large bowl for this.

In another bowl, mix the flour with the baking powder. Stir in the quark and lemon juice alternately until everything is well mixed. Then mix it with the egg yolk mixture.

Beat the egg white until stiff and then stir it gently through the batter with a spatula. Finally, mix half of the blueberries into the batter and mix gently together.

Pour the batter into the springform and bake the cheesecake in the oven for 50 minutes. Then brush the cake with the blueberry jam and cover with aluminum foil. Bake the cake after 15-20 minutes.

Turn off the oven and let the cake cool slightly in the oven. Then take the pie out and garnish the top of the pie with the remaining blueberries. Let the cake cool completely before serving. By the way, you will notice that it still comes out of the oven a bit “drill-like”, this will be fine. The cheesecake will get its firmness during cooling.
