Method

Combine dry ingredients in a large bowl.  Slowly add vanilla, oil, vinegar mixture, coffee, and jelly.  Stir until thoroughly combined.

Grease and flour two nine-inch cake pans.  Divide batter between the two pans, and bake for about twenty-five minutes in a 350-degree oven.
