We all know roasted marshmallows. But do you know that you can also melt marshmallows really well? And then you make a cheesecake. But you can do this with any kind of marshmallow. Use good quality and don’t be tempted to add extra sugar, because the marshmallows are sweet enough by themselves. If you are using different colors of marshmallows, you can also layer the cheesecake-like I did with the green and red. That makes it even more festive.
What you need for 1 cheesecake
– 150gr country cookies
– 30gr butter, melted
– 1 bag (225gr) Merry X-Mas marshmallows (or use 225gr other marshmallows)
– 100ml of milk
– 400gr cream cheese
– 500gr full quark
– 2 tsp vanilla extract

Preparation time: 30 minutes / Waiting time: 4 hours
Grind the cookies completely in the food processor. Or put them in a ziplock bag and roll them finely with a rolling pin. Then mix it with the melted butter. Cover a round springform pan with baking paper or grease well. Pour the cookie mixture on the bottom, spread evenly, and press well. Put in the fridge for 30 minutes.
Keep 9 marshmallows separately (3 of each color). Put the red and green both separately in a saucepan and divide the white evenly. Pour 50ml of milk into each pan and slowly bring to the boil. Stir in both pans at the same time until the marshmallows are completely melted and you are left with a thick marshmallow liquid. If you are using 1 color marshmallows, you can melt everything in 1 pan.
Beat 200gr cream cheese with 250gr full quark and 1 tsp vanilla extract in a bowl. Pour in the green marshmallow mixture and stir well until everything is mixed and there are no more lumps. Spoon this on the bottom and spread. Repeat this exactly, but with the red marshmallow mixture. Spoon this onto the green mixture and spread evenly. If you use marshmallows of 1 color, you can mix everything together and scoop it into the springform.
If necessary, make another pattern in the mixture with a skewer. Cover and refrigerate for at least 4 hours. Just before serving, divide the reserved marshmallows over it in the desired pattern. Press each marshmallow slightly into the mixture. Make the cake even more festive by grating white chocolate over it.
