INGREDIENTS for Homemade Sugar-Free Diabetic Cake Recipe

Two cups of raisins
Three cups of water
Two large eggs
Three tablespoons of liquid sugar substitute
Three-fourths cup of vegetable or canola oil
One teaspoon of vanilla extract
One teaspoon of baking soda
One-half teaspoon each, salt and nutmeg
One and one-half teaspoons cinnamon
Two cups of flour
One cup of sugar-free applesauce
One cup of walnuts, chopped (optional)

Prepare a ten-inch tube or Bundt pan with shortening and flour.
